Welcome to our Green Zone. Environmental responsibility affects us all and irrespective of individual opinions surrounding “Climate Change” most would agree that we should question the way we live and of course, the way we work and operate our facilities. We hav developed a ‘Green’ Kitchen concept to consider the impact of commercial catering on the environment and, by carefully revising design, specification and working practices we have found it is possible to reduce environmental impact, save on running costs and still retain operational excellence. Professional practices and contractors are targeted to meet an “Excellent” BREEAM rating as well as the government’s Carbon Reduction Targets (CRTs) introduced in April 2010. Therefore the ideas we consider will be significant to those involved in new works and refurbishments, taking into account the requirement that nationwide it will be essential to green retro-fit existing buildings both commercial and residential if the county is to have any chance of hitting its agreed carbon reduction targets agreed at Kyoto. Similarly, end users working in operations, catering and facilities management have an increasing responsibility to reduce carbon footprint and will appreciate the ongoing benefits in making substantial savings on energy costs. We would urge consideration of the equipment and operational design we explore in this Zone and we believe that by employing careful selection, equipment can pay for itself during the average lifespan of a commercial catering facilty.
